Good evening! I hope you had a wonderful weekend. I had a nice four day weekend but it still went way too fast! I enjoyed some time with family on Thanksgiving day and stayed at my parents’ for a couple of nights after that. Check out my uncle and his morbidly obese cat. Aspen wasn’t quite sure what to think of him. haha

It was a really relaxing weekend and I even got my Christmas shopping done for the BF. All online! I didn’t venture out to shop on Black Friday but the BF did with my dad and said it was crazy! Glad I missed out on that. Aspen enjoyed lots of attention and down time as well.
She took her cue from my parent’s dog, Jack.
Jack was probably tired from ruining the tennis ball that Aspen was playing with. He’s doesn’t share well.
After a few days back in Wisconsin, we headed home and I worked on putting up the Christmas tree and we also painted the BF’s office.
Sorry I forgot to take a picture of the tree and the outside lights that I put up so I’ll have to post one later. I also attempted to take a picture of the completed room, but my camera was acting up. It’s a lovely light blue/periwinkle color but reminds me of how much I dislike painting.
Tonight for dinner I whipped up a mock-Hamburger Helper without all of the fake stuff that’s in there. I found this recipe on Pinterest when I was looking for something to make with the ground beef we had thawed. It was really quite tasty even though I didn’t have chili powder or cayenne pepper available. I had garlic salt instead of powder so I skipped the salt too and substituted flour for cornstarch since I didn’t have any available.
Oh yeah, I didn’t have any macaroni so spaghetti noodles broken into thirds is what worked. I love how this dish has no faky ingredients like the original and still takes about the same amount of time! There’s no excuse for using the boxed junk anymore.
And just cause I can, one more picture of Aspen and I enjoying some downtime.
I hope you had a wonderful Thanksgiving and weekend and were able to spend at least some of the time with family. I’m not ready for a full week of work after two shorter weeks but I have to make money somehow!
